LEMON RICE RECIPE

    Today we are going to prepare lemon rice my favorite. This is a rice based dish widely prepared in south India. It is also called chitranna.
    It is prepared by mixing cooked rice with a special seasoning.Its flavorful sour rice recipe, because of lemon.This dish can be easily made in minute's if we already have freshly cooked rice or leftover rice.
    In temple's it is offered to GOD and served as prasadam. We can make this recipe for festivals and also for special occasions.
 INGREDIENTS
  • Cooked rice
  • Lemons 2 
  • Groundnuts 3 tbsp
  • Cumin seeds 1 tsp
  • Mustard seeds 1 tsp
  • Curry leaves
  • Pinch of hing(asafoetida)
  • Turmeric powder 1 tsp
  • Oil 3 tbsp
  • Green chilies 4 
  • Salt as per taste
  • Red chilies 2 
  • Chana dal 1 tbs
  • Urad dal 1 tsp
Procedure
1.Heat oil in a pan.Add peanuts fry them and keep aside.
2.Add chana dal,urad dal,cumin seeds,mustard seeds,red chilies, green chilies, let them splutter.
3.Add curry leaves, turmeric powder,hing and peanuts, give it a stir.
4.Take cooked rice add salt and mix it properly.
5.Remove the seeds of lemon and squeeze it in rice.mix them and taste it, add salt if any needed.

6.Our lemon rice is ready to be served.serving 2 persons.

AMARANTH LEAVES FRY RECIPE /THOTAKURA FRY

    Thotakura fry is a traditional recipe which we used to relish always.one of the best things about amaranth leaves is its availability through out the year.This is a quick stir fry recipe which can be made in minute's and goes well with Hot Steamed rice, Rotis. serves two person's

Ingredients
  • Fresh amaranth leaves
  • Green chilies 4
  • Onion 1 medium sized 
  • Garlic cloves 4 to 5
  • Red chilies 2
  • Cumin seeds 1 tsp
  • Mustard seeds 1 tsp
  • Chana dal 1 tsp
  • Turmeric powder 1 tsp
  • Urad dal 1 tsp
  • Curry leaves
  • Coriander leaves
  • Salt as per taste
STEPS FOR PREPARATION
1.Cleanly wash the amaranth leaves and chop them.keep it in a colander to drain excess water.
2.Heat oil in a pan add all seasoning items, chana dal, urad dal,cumin seeds, mustard seeds, red chilies, curry leaves, garlic cloves. Let them splatter

3.Now add green chilies,onion,amaranth leaves,
turmeric powder, salt. and cover with a lid,cook for about 10 minute's in a medium flame.stir in between.

4.Add coriander leaves and serve hot.

CURRY LEAF POWDER/KARIVEPAKU KARAM

     Curry leaves are popular in India because of it's aroma and striking taste.In olden day's we used to have this curry leaves plant in our houses.
    Today we are going to make fresh curry leaves power mixed with some spices, It's so flavorful that it can make a simple meal interesting.It's a delicious south Indian powder that is served with idly's, dosa and white rice with ghee.

Indredients
  • Fresh curry leaves 2 cups
  • Urad dal 1 tbsp
  • Chana dal 1 tbsp
  • 4 Garlic cloves
  • Oil 1 tbsp
  • Salt as per taste (I used rock salt)
  • Red chilies 11
  • Cumin seeds 1 tbsp
  • Cilantro seeds 1 tbsp
  • Tamarind little bit
  • Turmeric powder 1 tsp
  • Hing 1 tsp
Steps to be followed

1.Wash and clean curry leaves in water add a little rock salt while washing.
2.Dry them on a clean dry cloth.let them dry completely without moisture.
3.Add oil in a pan and roast the Urad dal, Chana dal, cumin seeds.toss them,do not burn them.
4.Now add red chilies,Cilantro seeds and fry them. 
5.Add turmeric powder and hing.
6.Add curry leaves and keep tossing until u get nice aroma.
7.Let them cool down completely and transfer into the mixer jar.
8.Add tamarind, salt into the jar and grind them to fine powder.
9.Add garlic cloves and give a pulse.
10.Transfer the curry leaves powder to a air tight container.

EASY CHOCOLATE CAKE WITH BISCUITS RECIPE (WITHOUT EGG AND OVEN)

    Today I am going to show u how to make a chocolate cake without egg's and oven.It's very easy to make , here I am using few ingredients to make this delicious yummy fluffy chocolate sponge cake.
    Vegetarians can also enjoy this cake.Children love to eat this cake,Mom's can even make this cake for small birthday parties and get together's.In this situation's like lock-down's this is the best cake to make.



INGREDIENTS
  • Bourbon biscuit's 2 packets
  • Regular ENO, or 1 tsp baking soda
  • Rock salt
  • Condensed Milk 5 tbsp
  • Plain flour little bit
  • Butter for greasing
  • Cashew nuts 
Steps to make cake
1.Break or crush the biscuit's into small pieces.
2.Grind the biscuit's in a mixer jar into fine powder.
3.Add milk to the powder and keep whisking till the mixture turns smooth and silky.
4.Take a hard bottomed vessel and pour rock salt or sand as a base, it has to be dry heat without any moisture.
5.Place a stand or a small bowl as a stand and preheat the vessel for 5 minute's in a medium flame.
6.Take any bowl and grease it with butter or oil.
7.Add plain flour,spread it to entire bowl and remove the extra powder.
8.Add baking soda or regular ENO to the cake batter and mix it well ,pour the batter in the bowl.  
9.add some grounded cashew nuts and tap the bowl to evenly spread the batter.
10.Carefully place the bowl in preheated vessel,close the lid and wait for 35 to 40 minute's.
11.Take a tooth pick and test the cake whether it cooked properly.Let the cake cool down properly and transfer to a plate and decorate it with fried cashew nuts and chocolates.

PRAWNS FRY RECIPE ( ROYYALA VEPUDU )

    Andhra style prawns fry taste awesome,it's a simple and quick stir type recipe. It's a highlight of Indian sea foods, There are different types of prawns available for us in different sizes.Here I used medium sized prawns.
NOTE:For any type of prawns recipes we should clean them properly by removing the black hair like thing on prawns, its poisonous.

Ingredient's(serves 2 persons)
  • 200 grms prawns
  • 2 tbsp lemon juice
  • Salt to taste
  • Red chill powder 2 tbsp
  • Ginger garlic paste 1 tbsp
  • Garam Masala 1 tbsp
  • Turmeric powder 1 tbsp
  • Green chili's 3
  • Onion 1 medium sized 
  • Mint leaves(optional)
  • Coriander leaves(optional)
Steps to be followed
1. Carefully clean and wash the prawns with salt and turmeric, drain the water completely.
2. Add ginger garlic paste, Salt, Lemon juice, Red chili powder, Garam masala to the prawns and mix them.
3. Cover with a lid and keep aside the marinate prawns for 30 minutes. 
4. Heat oil in a pan and add Mint leaves.
5. Add green chilis, onions.
6. Stir fry them till onion's turn to pink color.
7. Add the marinated mixture of prawns into the pan and stir fry about 5 minute's.
8. Add salt,water if any needed and cook about 3 minutes in medium flame,Stir in between.
9. At-last add coriander leaves.
10.Serve hot with steamed rice.


RIDGE GOURD CURRY WITH MILK RECIPE (BEERAKAYA PAALU POSINA KURA)

    Ridge gourd curry is a simple, healthy and quick recipe which can be made in minutes.It is a delicious curry that has a slight sweet flavor because of milk,which goes well with roti's and steamed white rice.
Note:While chopping ridge gourd don't forget to taste a piece because some ridge gourd's taste bitter in taste.If we use that our curry will be spoiled.
    We can use ridge gourd peel to make chutney.It tastes great.serves 2 persons

Ingredients
  • Ridge gourd 2 medium sized finely chopped
  • Half cup boiled milk
  • cumin seeds
  • mustard seeds
  • Turmeric powder 1 tsp
  • Green chili's 3
  • Onion 1 medium sized
  • Salt as per taste
  • Red chili powder
  • Curry leaves(optional)
  • Coriander leaves
Steps to be followed
1. Heat oil in a pan, add cumin seeds,mustard seeds & curry leaves let them splatter.
2. Add green chili's, onions, turmeric powder stir fry them for about 2 minutes.
3. Add  Ridge gourd pieces to it. 
4.Add salt, red chili powder, cover it with lid.stir in between put it on medium flame for about 3 minutes.
5.Add creamy milk to it. 
6.Add coriander leaves.and switch off the stove.
