AMARANTH LEAVES FRY RECIPE /THOTAKURA FRY

Thotakura (Amarnath leaves) fry is a traditional recipe which we used to relish always. One of the best things about amaranth leaves is its availability through out the year. This is a quick stir fry recipe which can be made in minute's and goes well with Hot Steamed rice, Rotis. 
    Serves two person's

Ingredients
  • Fresh amaranth leaves
  • Green chilies 4
  • Onion 1 medium sized 
  • Garlic cloves 4 to 5
  • Red chilies 2
  • Cumin seeds 1 tsp
  • Mustard seeds 1 tsp
  • Chana dal 1 tsp
  • Turmeric powder 1 tsp
  • Urad dal 1 tsp
  • Curry leaves
  • Coriander leaves
  • Salt as per taste
STEPS FOR PREPARATION

1.Cleanly wash the amaranth leaves and chop them.keep it in a colander to drain excess water.
2.Heat oil in a pan add all seasoning items, chana dal, urad dal,cumin seeds, mustard seeds, red chilies, curry leaves, garlic cloves. Let them splatter

3.Now add green chilies,onion,amaranth leaves, turmeric powder, salt and cover with a lid, cook for about 10 minute's in a medium flame & stir in between.

4.Add coriander leaves and serve hot.
