DONDAKAYA PALILLU PAKODI CURRY/IVY GOURD PAKODI /KOVAKKA FRY

    Dondakaya Pakodi curry is not only quick and easy to prepare but also it's full of flavors.It is a delicious fritter with crispy exterior and soft interior that can be served as evening snack or served as side dish for lunch.It goes well with white rice along with Sambar Dal's.

INGREDIENTS
  • Ivy gourd 25 pieces sliced vertically
  • Gram flour 1/2 cup
  • Rice flour 1/4 cup
  • Turmeric powder 1 tsp
  • Salt as per taste
  • Ginger garlic paste
  • pea nuts 1/2 cup
  • Chili powder 1 tbsp
  • Water 
  • Coriander leaves (optional)
  • Oil for frying
Steps to be followed
1.Heat oil in a pan for deep frying.
2.Wash and slice ivy gourd as shown.
3.Now to the sliced dondakaya add gram flour, rice flour, turmeric powder, chili powder, ginger garlic paste, salt and sprinkle water.
4.Mix well so that Dondakaya is coated well with the dry ingredients.
5.Add dondakaya pieces in batches to the oil and deep fry them in a medium flame.
6.When it looks crispy and evenly colored remove them and transfer them to a plate with paper towel.
7.Now fry the next batch and repeat the process till 
all the dondakaya mixture is over.

8.Now in the same oil deep fry the pea nuts and mix to the fried Dondakaya.
9.Garnish with coriander leaves and our dondakaya peanuts pakodi curry is ready to be served.

PATODI /GREEN DAL DOSA MASALA CURRY RECIPE

     Today we are going to make a delicious Masala curry with green dal dosha. Its super easy to make recipe.We can prepare this tasty masala curry when we don't have any vegetables in house.It goes well with steamed white rice and also with roti's. This is my own recipe which came out very well, Inspired from a Marathi dish Patodi recipe.

Ingredients


  • Moong beans batter = which is made by soaking moong beans 3 hours before, add salt to the batter.
  • Ginger garlic paste 1 tbsp
  • Garam masala 1 tbsp
  • Lemon 1
  • Red chilies 2
  • Salt as per taste
  • Cumin seeds
  • Onion 1 medium sized
  • Green chilies 3
  • Oil 3 tbsp
  • Mustard seeds
  • Turmeric powder 1 tsp
  • Curry leaves 
  • Red chili powder 1tsp
  • Coriander leaves
Steps to prepare

1.Prepare Dosa from the Moong beans batter made and cut into small small pieces.

2.Heat oil in a pan and add the cumin seeds, mustard seeds,curry leaves, green chilies,and onion.

3.Let them splatter. Now add ginger garlic paste, turmeric powder, masala powder and stir them in a medium flame.

4.Now add the Green Gram Dosa pieces and also add red chili powder and salt.


5.Keep tossing them in between add little bit lemon juice. 

6.Add coriander leaves and serve hot with white rice.

RAVA KESARI/SOOJI HALWA RECIPE

     Rava kesari is a popular south Indian sweet dish made from semolina.We can make this melting dessert very easily.It is made often in many houses due to its simplicity,It is known with several other names like Sooji kesari, Sooji halwa, Sheera or Semolina Kesari. It is also prepared with milk which is known as Sheera and it is offered as nivedyam.

It is the best dish for festivals.

Ingredients

  • Bombay Rava 1 cup
  • Sugar one and half cup
  • Cashew nuts
  • Raisins
  • Cardamom Powder/Elaichi Powder half tsp
  • Water 3 cups
  • Ghee 4 tbsp
  • Saffron food color(optional)
Steps to be followed

1.Heat ghee in a pan , add cashew nuts and raisins.

2.Roast them till they change color in a low flame and keep aside.

3.Now in the same ghee add Bombay Rava and roast on low flame for 5 minutes or till it turns aromatic, keep aside.

4.Boil 3 cups water in a kadai, add roasted bombay rava.

5.Stir continuously till the rava absorbs water and no lumps are formed.


6.Add one and half cup sugar (depending on sweetness you prefer).

7.Keep the flame on low and stir well till the sugar dissolves.

  

8.Add saffron water or Kesari food color(optional). cover and simmer for 2 minutes.

9.Add cardamom powder, fried cashew nuts and  raisins.

10.Mix well till the Rava Kesari separates from pan.

Finally our Rava Kesari is ready to be served as dessert.

BEETROOT FRY RECIPE

    Beetroots, commonly known as beets, are a popular root vegetable used in many cuisines around the world.
    This is a stir fry recipe which is made in minutes. Beetroot fry not only adds color to your meal but also great flavor. Besides their amazing color they are a nutritional powerhouse.
    The beets have to be sauteed in oil and cook in their own juice,their is no need to add water. They are delicious and easy to add to your diet.

  INGREDIENTS
  • Beetroots 2
  • Onion 1 finely chopped medium sized
  •  Green chilies 3
  • Cumin seeds 1 tbsp
  • Mustard seeds 1 tbsp
  • Curry leaves
  • Salt as per taste
  • Oil 3 tbsp
  • Turmeric powder 1 tbsp
  • Red chilies 2
Steps to prepare 
1.Heat oil in a pan.Add cumin seeds, mustard seeds, red chilies,curry leaves let them splutter.
2.Add turmeric powder ,finely chopped green chilies and onion.let the onions turn light pink.
3.Add finely chopped beetroot in it and stir it. Fry them in a medium flame.
4.Add salt. Keep tossing in between.close it with a lid.
5.Fry them until the beetroots change color and they become soft. 
6.Garnish it with coriander leaves 
7.Our beetroot fry is ready to be served with hot steamed white rice.

ALOO CHAT/POTATO CHAT RECIPE

     Today we are going to make a delicious super easy potato chat,Its rich in flavors. We can have this as evening snacks along with tea.It's is a street food originating from the Indian sub-continent.This is sweet,spicy,sour,and tangy in taste.I have made this by boiling potatoes but we can also make by grilled or fried potatoes.

Ingredients

  • Medium sized potatoes 2
  • Medium sized onion 1
  • Green chili 1 finely choped
  • Mint leaves
  • Coriander leaves
  • Salt as per taste
  • Cumin powder 1 tsp
  • Chat masala powder 1 tsp
  • Dry mango powder (amchur powder)
  • Half lemon 
  • Tomato medium sized 1
  • Cornflakes or any namkeen
  • Tamarind pulp 1 tbsp
  • pepper powder 1 tsp
  • Tomato ketchup 1 tbsp
   

Steps to make Potato chat

1.Wash peel and boil the potatoes ,they must be just cooked and not turn mushy.Don't over cook them add salt while boiling.

2.Heat oil in a pan for deep frying potato pieces. Deep fry them and keep aside.

3.Add all the ingredients cumin powder, chat masala powder, dry mango powder, pepper powder and salt to the boiled potatoes.

4.Add tamarind pulp. 

5.Also add  green chilies,onion, and tomatoes. also add half lemon juice.

6.Add mint leaves, coriander leaves, tomato ketchup. 

7.Add corn flakes and mix all of them properly.

8. Our tasty crispy delicious aloo chat is ready to eat.

VADA /MINAPA GARELLU

    Vada/Minapa Garellu is a traditional recipe of Andhra. We can make this vada for breakfast, snacks, and for festivals and picnic's any occasions.
    This can be prepared using some easily available ingredients in your kitchen. This can be prepared very easily.
    The perfect blend of south Indian flavours can be found in this dish when it is served with coconut, groundnut, tomato chutney, sambhar or chicken cuury. so try this yummy dish with your loved ones.
    
Ingredients
  • 2 cups soaked overnight urad dal
  • Curry leaves
  • Cumin seeds 1 tbsp
  • Green chilies 2 finely chopped
  • Onion medium sized finely choped
  • Ginger grated 1 tbsp
  • Salt as per taste
  • Coriander leaves
  • Oil for deep frying
  • Banana leaf
  • Cooking soda(optional)
 Steps to prepare

1.Grind the soaked urad dal with very little water to make a thick batter.
2.Add cumin seeds,green chilies,onion,soda,ginger
salt,coriander leaves,curry leaves into batter and mix well.
3.Take a banana leaf wash it or you can use plastic cover and place a small ball of batter, pierce a hole in the middle of each of them.
4.Heat oil in a pan and a little pinch of batter if it comes up then the oil is ready for deep frying vada's.

5.Now deep fry the vada's in a medium flame till they turn golden brown. remove the excess oil.
6.Serve the hot vada's with your favorite chutney.
