Today we are going to make healthy and tasty spinach rice recipe. This is a very simple one pot recipe of Palak Pulao.
For kids who do not like green leafy veggies- the greens can always be added to recipes where their presence is hidden and this is one of such recipe.
We can serve Palak Pulao with a side Salad, Raita or Pickle.
Here I am doing this with normal rice but you can use Basmati rice for best results.

Ingredients
- Fresh Palak washed and chopped 2 cups
- Rice 2 cups washed and soaked
- Garlic cloves
- Ginger 2 pieces
- Garam masala(optional)
- Salt as per taste
- Potato 1 chopped
- Tomato 1 chopped
- Bay leaf or tej patta
- Green chilies 5
- Cloves 4
- Cumin seeds 1 tsp
- 1/2 inch cinnamon
- Water 4 cups
- Onion 1 big sized sliced
- Lemon juice 1 tsp
- Wash the rice and soak them for 15 minutes.
- Rinse spinach leaves very well and chop them roughly.
- Now add green chilies, spinach leaves in a blender or grinder jar.Also add ginger,garlic cloves,garam masala.
- Blend to a smooth puree and keep aside.
- Heat oil in a pan
- Add the following spices and saute them till they splutter- Indian bay leaf,cloves, cinnamon, cumin seeds.
- Next add thinly sliced onion.stir and saute them till they turn golden brown color.
- Add the spinach puree.stir and saute for 4 to 5 minutes.
- Now add potato and tomato pieces also add salt and cover with lid.
- Add this mixture to the rice , also add required salt and water mix well.Cover with a lid.
- Stir in between also add lemon juice.
- Cook for 15 min and palak pulao is ready to be served.
