RESTAURANT STYLE VEG DUM BIRYANI RECIPE

  Today we are going to prepare restaurant style veg dum biryani. It became very popular as one of the most nutritious, rich and royal foods. There are so many kinds of veg biryani one gets to see on a restaurant menu like Hyderabadi biryani, kerala biryani, etc.


    Children love to eat this biryani as it is one of the most popular, aromatic and delicious food. It's very flavorful because of the premium quality spices, masala powders, herbs and vegetables used. It's  kid's friendly and a perfect meal for your entire family also goes well in the office & school lunch boxes.  


 

Ingredients

Cooking rice

  • 2 cups basmati rice 
  • 1/4 tsp Shahi jeera
  • pepper 4
  • Elachi
  • 1 bay leaf
  • Salt to taste
  • Ghee or oil 1 tsp

Dry spices

  • 2 Inch cinnamon  stick
  • 2 Cardamoms
  • Cloves 5
  • 2 Stands mace
  • 1 Star anise
  • 1 bay leaf
  • 1/2 tsp Shahi jeera
Veggies

  • Onion 1 large , chopped
  • 8 Florets cauliflower medium sized
  • 1 Potato large , cubed
  • 2 carrots large ,chopped
  • 1 capsicum , chopped
  • 4 to 5 Beans chopped
  • Corn seeds 4 tbsp
  •  2 tbsp mint leaves
  • 2 green chilies
Masala's

  • 1/3 tsp red chili powder
  • Salt as per taste
  • 1/5 tsp turmeric powder
  • 4 tbsp ghee or oil
  • 1 tbsp ginger garlic paste
  • 1 tbsp biryani masala powder or garam masala powder
  • 1 cup curd (thick to soak veggies)
Preparation

  • Wash and soak rice for at least 30 mins. 
  • Heat oil or ghee in a pan, add all the dry spices except Shahi jeera. Sauté till you get an aroma.Take shahi jeera and sauté until they crackle.
  • Add ginger garlic paste ,sauté till raw small goes off.
  • Add onions, all the vegetables soaked in curd and fry for 2 to 3 mins.

  • Add salt, turmeric powder, red chili powder, biryani masala powder.
  • Mix well and cover with a lid. while veggies are getting cooked, you can proceed with the next step.

  • In a large pot add water to boil, add oil shahi jeera, bay leaf, adjust the salt as needed.
  • Add washed, soaked and drained basmati rice.
  • Cook this rice till it is 90%done.

  • Drain off the excess water and set aside.
  • Remove the cooked vegetables water a little and keep aside. 

  • When veggies releasing oil check the taste according to your taste. Add salt ,chili powder mix well and set aside half of the curry.

     
  • Add  some basmati rice on the top.



  • Add mint leaves, coriander leaves on the top of rice, also add the water of veggies on the rice.

  • Add the curry and repeat layering rice, mint, coriander leaves.
  • Begin to heat an old bottom tawa and proceed with the next step.

  • Place the lid and a heavy vessel on the lid.
  • Cook this way 5 to 7 mins. The biryani rice turns out perfect. Allow it to rest  for at least 15 mins.
