PALAK PULAO/PALAKURA PULAO

     Today we are going to make healthy and tasty spinach rice recipe. This is a very simple one pot recipe of Palak Pulao.

    For kids who do not like green leafy veggies- the greens can always be added to recipes where their presence is hidden and this is one of such recipe.


We can serve Palak Pulao with a side Salad, Raita or Pickle.

Here I am doing this with normal rice but you can use Basmati rice for best results.

 Ingredients

  • Fresh palak washed and chopped 2 cups
  • Rice 2 cups washed and soaked

  • Garlic cloves
  • Ginger 2 pieces
  • Garam Masala (optional)
  • Salt as per taste
  • Potato 1 chopped
  • Tomato 1 chopped
  • Bay leaf or Tej Patta
  • Green chilies 5
  • Cloves 4
  • Cumin seeds 1 tsp
  • 1/2 inch cinnamon
  • Water 4 cups
  • Onion 1 big sized sliced
  • Lemon juice 1 tsp
How to make Palak Pulao

  • Wash the rice and soak them for 15 minutes.

  • Rinse spinach leaves very well and chop them roughly.

  • Now add green chilies, spinach leaves in a blender or grinder jar.Also add ginger,garlic cloves,garam masala.


  • Blend to a smooth puree and keep aside.

  • Heat oil in a pan

  • Add the following spices and saute them till they splutter- Indian bay leaf,cloves, cinnamon, cumin seeds.

  • Next add thinly sliced onion.stir and saute them till they turn golden brown color.

  • Add the spinach puree.stir and saute for 4 to 5 minutes.

  • Now add potato and tomato pieces also add salt and cover with lid.

  • Add this mixture to the rice , also add required salt and water mix well.Cover with a lid.

  • Stir in between also add lemon juice.

  • Cook for 15 min and palak pulao is ready to be served.

BOTTLE GOURD WITH MILK CURRY/SORAKAYA PALU KURA RECIPE

     Today we are going to prepare Sorakaya Palu or bottle gourd milk curry which is very delicious.It's taste is enhanced by adding milk as final step.My mom used to make this curry once in a week without fail.It's a very healthy and yummy.

    This is a simple and easy recipe and goes well with Rice, Roti, Chapathi. so let's start preparing.

Ingredients

  • Oil 2 tbsp
  • Cumin seeds 1 tsp
  • Mustard seeds 1 tsp
  • Curry leaves
  • Bottle gourd medium chopped
  • Boiled milk half cup
  • coriander leaves
  • Salt as per taste
  • Onion medium sized 1
  • Green chilies 3 chopped
  • Red chili powder 1 tsp
  • Turmeric powder 1 tsp
Step by step procedure

1.Wash , peel the bottle gourd and chop them to medium sized pieces.

2.Heat oil in a pan, add cumin seeds, mustard seeds, curry leaves and let them splutter.

3.Add green chilies and onion toss them in a medium flame.

4.Now add bottle gourd pieces, add salt and cover with a lid in a low flame.

5.Add turmeric powder and red chili powder.

6.When oil separates add milk.


7. At last add coriander leaves and serve hot.

CHAMA DUMPA VEPUDU/COLOCASIA ROOTS STIR FRY/ARBI FRY

     Today we are going to prepare tasty Chama Dumpa Vepudu, it is a simple Andhra recipe.This is one such dish which should be eaten immediately.some how, I don't think reheated arbi fry tastes as good. It goes well with white rice, also as a side dish with sambar rice. Taro root vegetable originally cultivated in Asia but now enjoyed around the world.

Ingredients 

  • Colocasia roots
  • Turmeric 1tbs
  • Garlic cloves
  • Curry leaves
  • Red chili powder 1 tbsp
  • Salt as per taste
  • Cilantro
  • Water for Boiling colocasia roots
Steps to be followed

1.Wash the colocasia roots and boil them in enough water till they are cooked.when you run a knife through it. it should go smoothly but the colocasia should be firm.

2.Peel them and cut into pieces.

3.Heat oil in a pan add curry leaves and add boiled colocasia roots.

4.Add turmeric powder to the pieces, keep tossing them in a medium flame.

5.Stir fry them till the pieces turn golden brown and crisp on the outside.

6.Now in a Motar add garlic cloves, crush them.

  

7. Add salt, red chili powder into motar and mix well.

8.Add the prepared mixture to the fried Colocasia roots.

9.Garnish them with cilantro leaves.
