DUM ALOO RECIPE

     Today we are going to prepare easy, delicious, creamy & flavorful Dum Aloo.

    Dum aloo is one of the classic Indian dishes served in a special meals like weddings, celebrations or festivals. Dum translates to steam cooked & aloo to potatoes. So Dum Aloo translates to potatoes that are steam cooked. It goes well with chapatis, roti or even with rice.

Ingredient's

  • Baby potatoes
  • Onions 2 medium sized
  • Tomatoes 2 medium sized
  • Oil 2 to 3 tbsp
  • Cloves 2
  • Green chilies 2 
  • Ginger garlic paste 1 tbsp
  • Salt as per taste
  • Water 3.5 cups for boiling
  • Red chili powder 1 tbsp
  • 1 cup thick plain yogurt(curd)
  • Coriander leaves (optional)
  • Bay leaf 1
  • Garam masala 1 tbsp
  • Turmeric powder 1 tsp
  • Green cardamom 2
  • Coriander powder 1 tsp
Preparation for Dum Aloo

  • Wash and peel baby potatoes.

  • Take 3.5 cups water add 1 tbsp salt, steam the potatoes untill they are 70% cooked.

  • Heat 3 tbsp of oil in a non-stick pan. Add the potatoes and shallow fry them on a medium high flame until golden.

  • Remove them to a plate.

  • Cut the potatoes to equal sized or prick each aloo with a fork 3 times so that it absorbs flavor's of the gravy.
  • Blend the onions and green chilies, make paste, keep aside.

  • Blend the tomatoes and cashew nuts (optional), keep aside.

  • Heat oil in pan add 1 bay leaf, cloves, ginger garlic paste &fry until the raw smell goes away.

  • Add the onion paste and sauté until the raw smell goes away

  • Add tomato paste and sauté also add chili powder, salt, coriander powder, garam masala powder, turmeric powder.

  • Saute until the masala becomes thick, smells good and aromatic.

  • Meanwhile whisk yogurt and keep aside.

  • Add potatoes to the masala and mix well.

  • Now add whisked yogurt mix it well and add water a little.

  • Cover with a tight lid. Dum cook on a low heat for 5 to 7 mins.

  • Add salt if needed and sprinkle coriander leaves (optional) add curd a little.
  • Transfer Dum Aloo to serving bowl.

  • Serve it hot with Roti, Chapathi, Butter naan or even with plain rice.
